I have taken a break from Instagram to be more present in life...especially to this new addition to our family. He came 4 weeks early on 11/22 and shows a strong resemblance to his ultrasound a week prior to his birth. Ultrasounds are such a technological gift. Our older kids wake up like it's Christmas every morning. The moments I've witnessed between this new baby and his siblings reminds me of what a gift my own siblings are.

I love succulents because they can survive my neglect. Guess what. One didn’t and I had to throw it away. Thankfully I’m better at taking care of kids. Right, kids? Bueller?

One of these tiers was one of my favorite flavors that more and more customers are discovering: banana cake with dulce de leche filling. The tough thing is always timing the banana purchase so they’re overly ripe and sweet, but I’ve gotten it down to a science now with all the recent orders to give me practice.

People think it’s funny that I hate baking. I love everything that happens after the baking. Designing. Eating. Watching people’s faces when they see the cake. But despite my German roots, I do not enjoy precise measuring, among other aspects of baking. But the light at the end of the tunnel is so bright, that the journey there becomes tolerable, and—dare I say—enjoyable at times.

This was one of those cakes that brought me to know another wonderful human through my work. @erika.rdzmen was a joy with whom to work on her wedding cake, but was enriching to get to know, personally, as we chatted. I’ve gotta be honest. Doing the cake thing is really an awesome creative outlet…but it’s not that important. It isn’t! It’s cake! It’s the people who are important; and have I met some wonderful people through my work!

The flavor request was “orange olive oil cake.” I’d been wanting to make one for ages, and as it turns out, Lilly had wanted to order it for a special occasion for some time. She gave me oil FROM GREECE to use in the cake. 🙌🏼 I highly recommend you try this flavor cake, because I can’t do justice to its delicate floral-fruity flavor with the gentlest note of olive oil. And because it is an oil-based cake, it is incredibly moist. I simmered red wine and sugar to a reduced glaze that colored some of the oranges brilliantly. Lilly had requested this gorgeous design, and I so enjoyed materializing it!

It’s finally time to spotlight this beauty that is shared in my stories months ago as I dehydrated and stained some of the the orange slices with a sweet red-wine reduction. @bishoptravels ordered this for her mother-in-law’s birthday. I was quite nervous, as her MIL is a refined chef and baker. 😬 But to my delight, she told Lilly it was one of the best cakes she’s ever had. Details of the unique cake flavor in the next post.

This is almost a year later! When my twins turned

This is almost a year later! When my twins turned 5, one asked for a dragon-and-castle cake and the other an alien-and-spaceship cake. The only way to tie these in was the color palette, which I loved choosing. Purple, green, orange. Just bright and fun! I let them each keep their fondant figures in their room as decoration. The dragon disappeared within days 😂. The only reason the alien still stands strong is because the shelf he’s on is out of reach. Pretty awesome to see these fondant figures mixed with tylose powder haven’t spoiled a year later! So now it’s a tradition that I make them a special fondant piece on top of the cake that they can keep.

My kids don’t get to help with customer cakes, so this was really fun. I love watching their skills develop. Julia took the lead on this one. Enjoy this video of my kids making their Auntie Katie and cousin Luke’s birthday cake. I wanted to use something colorful on the sides instead of KitKats (plus, this was 1/4 the cost), and these rainbow @twizzlers turned out to be a GORGEOUS alternative.

I hand-sculpted everything out of fondant. The castle is fondant hugging a cardboard roll. I’m excited to show you a close-up of the dragon I dreamt up and created. I hand-sculpted the alien based on Toy Story’s alien. My favorite parts are the antenna and subtly protruding lips.

The 3 close-ups here highlight the homemade bubbles that delight me beyond measure. They were very touch-and-go…and sadly, 3 didn’t make it. But I knew I’d stink at this my first go-around, so I made more than I needed at the start of the 3-day process.

My summer best-seller (which has actually carried over to winter 😂) features thick vanilla cake layers sandwiching filling layers of cream cheese whipped cream and fresh, chopped strawberries, covered in my never-too-sweet vanilla buttercream. @noella_asiam entrusted this enchanting design to me, including the 3-day process of making the (edible) bubbles made from gelatin and other ingredients (kinda weird but fun—look up Candy Company’s Gelatin Bubble tutorial on YouTube). Scraping the edges of a half cake always presents a challenge, so I work at it those edges for roughly an hour. Btw, no, I could not resist the urge to put a bunch of Pearls on Zoey-Pearl’s cake.

This customer and her family have visions of how they want their cakes to look for their sweet babies, and I was enchanted by this one, in particular. The top is an actual carousel toy I engraved into a thick disk of fondant to protect the toy from the buttercream. It plays Beethoven’s Für Elise, a nostalgic tune from my piano past when I’d tinker around to figure out a piece, Suzuki-style. This one was…not good. 😂 But the original IS!
